I started preparing meals for the week on Sundays a couple of weeks ago. It's a huge time saver. Since I gave up fast food for Lent... this recipe for homemade Egg (Mc)Muffins caught my eye. You can make it healthier like I did, too. (Use Southwest style Egg Beaters, use Fat Free Shredded Cheddar Cheese, and pair it with Veggie Sausage Patties...spicy, of course.)
You can freeze them, too. Wrap in aluminum foil and place 6 in a ziplock gallon bag. Just put them in the microwave for 90 seconds or so (depending on power level). Tasted good! Click here for the recipe.
