Scott’s Wild Game Chili

Prep Time: 1 hour

Cooking Time: 4-8 hours in a slow cooker crock pot

Makes: A Lot

1-lb ground bison

1-lb mild or spicy turkey sausage in skin (typically 3-4 links)

1/2-lb ground venison (if available)

1-2 chili seasoning mix

1 can Bush's hot chili beans

1 can Bush's mild chili beans

1 can cannelini or white kidney beans (drained)

2 cans 15-oz diced tomatoes (basil, garlic, & italian flavor)

1 can 15-oz diced tomatoes (for chili)

1 can 15-oz tomato sauce

1 large onion - diced

1 poblano pepper - diced, no seeds

3 serrano peppers - diced, no seeds

2 cloves of garlic - minced or thinly sliced by razor blade

Optional Seasoning - Use Seasoning To Taste while chili is simmering in crock pot - Preferred Seasonings include: Zattaran's creole seasoning (secret weapon!), Tabasco, Salt, Pepper, Oregano, Chili Powder, Garlic Powder, Shoop's seasoned salt, ground cumin

To make chili thinner, add 3/4 cup beer (Guinness Stout or Sam Adams) or red wine or Absolut Pepper vodka. Beer may also be used to cook turkey sausage before browning. Spicy V8 can also be used to thin chili before serving.

1.) brown bison in skillet with one clove of garlic, Zattaran's, and Shoop's (drain grease)

2.) brown venison in skillet with one clove of garlic, Zattaran's, and Shoop's (drain grease)

3.) brown and cook turkey sausage (drain grease, slice sausage into thin pieces)

Add meat to the remainder of ingredients in large crock pot. Mix thoroughly. Simmer on low for a couple hours. Taste and season appropriately. Spice heat should be a slow burn.

Simmer on low for two more hours. Taste and season appropriately, if necessary.

Simmer on low four additional hours.
